When you're in the mood to cook, but not in the mood to shop, you need a good pantry recipe. Pantry recipes call for no special ingredients, no trips to the grocery store, just pantry staples that you most likely already have on hand. 

 

Healthy Granola

 

The next time you wake up hungry and someone has eaten all your cereal, don't stress, just whip up a batch of Healthy Granola. All you need are some rolled oats, almonds (or any nuts or seeds you have) some kind of cooking oil (coconut oil works well), dried coconut and some honey or maple syrup to sweeten it. Kick the flavour profile up to full blast with some ground cinnamon, salt, and a touch of vanilla. 

 

Black-Eyed Pea Soup

 

The great thing about pantry recipes is you can be a bit creative.  Black-Eyed Pea Soup usually calls for ham hocks. If you find yourself fresh out of ham hocks, bacon will do just fine. If you don't have fresh or frozen collard greens, any frozen greens will do in a pinch. Even if you don't have black-eyed peas, you can substitute whatever dried beans you do have. You're still going to end up with a hot, comforting and satisfying soup.
