Hearty Grilled Shrimp Foil Packets

This Grilled Shrimp in Foil Packets recipe is easy and delicious. Take 1.5 pounds of peeled shrimp (depending on the portion/number of people), 2 ears of corn cut in halves, 2 sausages (any kind) cut into slices, 1 pound of potatoes cut in large chunks (pre-boil or microwave for 10 minutes to soften), 2 cloves of minced garlic and combine in a large bowl. Drizzle the mixture with olive oil, salt, pepper, and parsley leaves, and toss thoroughly. Once tossed, portion the mixture out into 4 x 12-inch sheets of aluminum foil, and place lemon wedges and 1tbsp of butter on top of each. Fold and seal the foil, and place the packets onto a preheated bbq, or in the oven at 375-400F. Cook through, about 10-15 minutes. You can serve them in the foil, on a plate, or with rice as a side.

 

Elegant Steak Caprese

 

This Steak Caprese recipe sounds fancy, and it is, but it's also easy. Get 6-8oz steaks for all diners. Marinate the steaks for 20 minutes (or overnight if you're ambitious) in a glaze of olive oil, balsamic vinegar, honey, minced garlic, and dried thyme. Preheat the bbq (or a frying pan) to high, and when ready, cook steaks for 5 minutes per side. Once done, add mozzarella slices and let cook for another 2 minutes (or turn off the heat, and let the dish sit covered at ambient temperature) until melted. Slice ripe tomatoes, season with salt and pepper, and place on top of the cheese when melted, along with a single leaf of basil. Serve this decadent and elegant dish with a side of baked potato, salad, or beer. 

 

You Can't Go Wrong with Burgers

 

The internet is full of amazing recipes and trendy "try-this" attention grabbers, so it's easy to overlook the classics. If your guests are barbecue purists, burgers are a great choice for Canada Day. Start with fresh ground beef, add salt and black pepper, olive oil, and throw in any spices your guests love -- like garlic, basil, thyme, onions, etc.. Form the mixture into burger patties as you preheat the bbq (or oven). Grill for 2-4 minutes a side (to taste), and let your burgers rest for 2 minutes while you toast some buns. Any side will do, but don't forget the condiments!

 

Pita Pizzas

 

While famous as a camper's backcountry meal, this one is fast and limited only by your imagination. Start with fresh pita bread, then add tomato sauce (less is more) or pesto (more is more), and the add-ons of your choice. Get creative with gourmet toppings like goat cheese or buffalo mozzarella, fresh basil, black olives, and capers. Grill your pita pizzas until the crusts are crispy and the cheese is melted. Serve immediately and enjoy.
